Lauren, what is the recipe for these pumpkin/choco chip/walnut cookies?I LOVE pumpkins! I don't know how to cook with pumpkins/pumpkin stuff, but I'd love to try.
Hi Cora,Here's the cookie recipe...I also added coconut to a batch. This recipe makes about 3 dozen small cookies. Enjoy!Ingredients1 cup canned pumpkin1 cup white sugar1/2 cup vegetable oil1 egg2 cups all-purpose flour2 teaspoons baking powder2 teaspoons ground cinnamon1/2 teaspoon salt1 teaspoon baking soda1 teaspoon milk1 tablespoon vanilla extract2 cups semisweet chocolate chips1/2 cup chopped walnuts (optional)DirectionsCombine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.Add vanilla, chocolate chips and nuts.Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.
